和風 #茶碗蒸🥚

Japanese steamed egg is one of my fav dish for any Japanese meal! My fav texture is soft like eating a pudding. Make sure the ratio of egg vs liquid should be 1:2

材料:
雞蛋 2隻
鰹魚湯 300毫升 (可用鰹魚粉開成)
醬油1茶匙
味醂1茶匙
糖1/2茶匙

蟹柳
日式魚片

香芹

做法
1) 雞蛋打勻,不用打發太耐,以免起泡,加入鰹魚湯和其他調味料拌勻,用隔篩濾去雜質及氣泡
2) 碗慢慢倒入蛋汁,碗上鋪上保鮮紙, 隔水蒸8-10分鐘
3) 最後放上香芹裝飾

♦️一定要把蛋汁過濾,去除雜質,並把茶碗蒸封上保鮮紙
♦️雞蛋與液體的黃金比例=1:2
♦️蒸時在鍋蓋與鍋子之間預留一支筷子空隙,溫度不致過高
